A rigorous choice for quality
In early 2008, Restaurant Les Jouberties decided to redevelop its kitchen. To take our existing kitchen division to an even higher level, we recruited an experienced culinary professional: Mr Jeroen Steentjes.
Top chef's apprentice
Chef de cuisine Mr Steentjes worked for several top chefs in Holland, including Peter Koehn of the Michelin Restaurant ‘De Karperdonkse Hoeve' in Eindhoven, and master-chef Lucas Rive of ‘De Bokkendoorns' (2 Michelin Stars) in Overveen. Eventually Mr Steentjes worked his way up to become head chef for ‘Oud-Zuid' in Amsterdam, where his creative genius roamed free.
Earning respect
It is not so easy for a foreign cook to become accepted in France. However, Mr Steentjes quickly earned the respect of the kitchen crew, including master-chef Jean-Marie Laspougeas. Mr Laspougeas has been working in our restaurant for many years and knows exactly how and where to find the best in regional produce. Today we find that Mr Steentjes and Mr Laspougeas are a perfect match and succeed in presenting our guests with exceptional delicacies time after time.
Sense and simplicity
Les Jouberties adopts a delicate approach to cuisine: a combination of honest, simple dishes without being overly rich. Chef de cuisine Mr Steentjes endeavours to provide fresh regional produce with limited processing in order to preserve the unique characteristic of the ingredients. It is best to judge the results for yourself by coming to visit Les Jouberties.
Informal atmosphere
A special mention must be made of the warm and personal, but always professional, ambience - the result of the mixed French-Dutch staff. You are always politely welcomed by a waiter who knows how to help you choose and to pour your wine. However, above all, we are and remain a ‘lieu de détente' and prefer to encourage a relaxed approach to dining without the need for formal evening wear.
